Lucía E. Briceño, R.D., is a lecturer and the Nutrition Undergraduate Program director at Metropolitan State University of Denver. Her areas of expertise are nutrition, food science and pediatrics.

With more than 10 years of experience in the health industry, Briceño has provided care for patients in hospital settings in California, Colorado and Venezuela. She has published research papers on the Atkins and ketogenic diets, and presented about diabetes in the Latinx population in North and Latin America.

She received her master’s degree in Nutritional Sciences from San Jose State University and her bachelor’s degree in Nutrition and Dietetics from Universidad Central de Venezuela.
